Historically, the north of Cordoba has been most known for its unique access to immense dove habitat in the western hills and in the vast eastern farmland. This area provides millions of tons of corn and soy bean that has been the main source of food for this species of dove (zenaida auriculata) for many decades. A wild bird that is very similar to the eared or mourning dove. This species is so prolific that it has been considered by local farmers a very harmful plague to their crops. This is the reason why there are no limits. These doves are local and we have no season, the hunting takes place, year round. One interesting fact is that the locals never hunt these doves.
Estancia Los Chañares and Posta del Norte have been strategically located in the heart of these two main areas; the hills and the vast farmland that, as we mentioned before, are the main feeding and roosting grounds for the doves. This makes it very convenient for our crew to go back and forth to and from our lodges and hunting leases in both areas.
Driving times will vary during the year, depending on the dove’s behavior that is mainly affected by weather, access to food and roosting habitat availability. As we all know, these are wild birds and we have to go where they go. This is made possible thanks to the hard work of our scouts, who on a daily basis run between 200 and 400 kilometers spotting the best and most convenient hunting fields.
ESTANCIA LOS CHANARES
Los Chanares is a Spanish colonial-style lodge, built in the year 2000. Superbly located in the middle of perfect roosting habitat and surrounded by rolling hills, northwest of the Cordoba Province.
The lodge has 9 private suites, each furnished with two twin sized beds, a private bathroom and are fully air conditioned and heated. These warm and comfortable spaces have been carefully decorated on several occasions over the last 17 years, by Jessica Ciappa, our avid associate that takes decoration seriously and to the highest level.
In 2018, We began a 2-year makeover plan. Estancia Los Chañares underwent a major "face-lift". We connected the living and dining areas and added a beautiful wine bar where guests can enjoy our extensive selection of fine Argentina wines. Jessica redecorated all the common areas to make you feel comfortable and right at home after a fun day in the field. We understand these dove hunting trips are one of the few moments of the year where you can relax. With this "face-lift", we ensure that the setting is just right for you all! We also worked on each room and all bathrooms on general décor. On the outdoor areas, we added a new fire pit and large jacuzzi, both by the pool area so that our guests can enjoy open skies year-round!
POSTA DEL NORTE LODGE
Due to our high demand in some months of the year, we had a great over flow of clients and needed to expand our capacity. This is why, in 2010, we made the strategic decision of acquiring Posta del Norte lodge, located in the heart of the vast farmlands of northern-eastern Cordoba. This gave us the possibility to expand our capacity and be able to continue hosting our overflow clients comfortably.
Posta del Norte was built in 2005, exclusively for dove hunting so its accommodations are very comfortable and convenient for the activity. This lodge was strategically placed on “route 9” that is the main artery connecting the whole province from north to south. Hence making it extremely easy to get to the best hunting grounds in the farmland area.
What makes Posta del Norte so special is its warm home-away-from-home coziness and convenient size, making it possible to offer our clients a new option for smaller sized groups to book a private lodge with a minimum of 7 guns.
In 2020, yes, during covid times!! Posta del Norte had a drastic change in management and went through a general re-decoration and expansion process, getting a new pool house and adding 2 extra rooms to the lodge; now making it available for groups of up to 16 guests, rather than 12 as it used to be.
Our boutique and high end accommodations at Posta del Norte and Los Chanares lodges are of the highest quality. The private suites and the food, wine and service are exquisite and on par with famous, world class, five star hoteliers. Every aspect of our five star dove hunting lodges exudes the highest level of comfort and luxury while still maintaining a comfortable, familiar atmosphere. Guests will enjoy 3-course gourmet meals accompanied by the finest selection of Argentine wines and authentic Cuban cigars. Our friendly staff have a permanent "can-do" attitude making it a vibrant and fun place to visit. A great team that has been with us since our origins in 2005.
WINING AND DINING
Because we are aware that our clients have been all over the world and are great food and wine connoisseurs; we have made an extra effort to have available, a delicious menu including all Argentinean flavors and a never ending supply of the best wines from mendoza and last but not least a great selection of cuban cigars.
Throughout the world, Argentina is best known for the quality of its beef and wine found in abundance here. Located in the heart of vast farmland and cattle country, Los Chanares and Posta del Norte are privy to some of the best quality beef in Argentina. Our guests will enjoy plentiful Argentine “asado” (barbeque) for lunch. All meals are a delicious and perfect balance of simple Argentine products mixed with a gourmet touch. Due to the large number of guests from southern United States, such as Louisiana and Texas; We proudly serve mouthwatering dove dishes including our own recipe of dove pate. Each dinner is accompanied by an impressive selection of the finest local wines. We also feature excellent malbec wines from acclaimed vineyards including Catena Zapata, Luigi Bosca, Rutini, and Andeluna among others. After dessert, enjoy our Chocolate Volcano or relax and enjoy a fine Cuban cigar with friends or family. Our fine selection includes Cohiba, Hoyo de Monterrey, Romeo & Juliet, Bolivar and Partagas among others.
Please note we recently made 2 improvements to our food and wine offering. With the addition of our wine bar, clients can now purchase an upgrade of the finest wines to enjoy during their meals. If you have a particular wine you enjoy, please let us know. We have also added a healthy menu choice for all meals.
170 grams of butter
170 grams of bitter chocolate
60 grams of sugar
50 grams of flour
Melt the butter and chocolate over hot water by placing the bowl over a pot of boiling water. The indirect heat keeps the chocolate from burning.
Mix the eggs, yolks and sugar well until they form a white mixture. Mix in the chocolate and butter followed by the flour.
Separate the mixture into small individually buttered receptacles. Bake at high temperature for 4 or 5 minutes. Do not overcook or the chocolate will not be soft inside.
Dove Pate (for 20 to 30 dove breasts)
1 head of garlic
4 medium sized onions
1 sweet red pepper
1 sweet green pepper
1 glass white wine
1 glass milk
1 cup milk cream
300 grams butter
Chop the vegetables finely and lightly brown over medium heat for approximately 15 minutes. Add the wine, doves, milk and herbs and cook for about 25 minutes. Add salt, pepper and crushed garlic.
Chop and process the mixture to reach the desired consistency, and then add the butter and cream. Process again and pour the mixture into a mould. Let stand for at least 12 hours - 48 hours is recommended.
